It's been cold, cold, cold here lately and nothing helps me feel warm like a nice hot bowl of soup. Lately, I've been trying to eat healthier, so I decided I would try and make a soup that was full of veggies and protein. Since we work full-time outside the home, I find it's easiest to make a soup in my slow cooker, so that it's all ready for dinner when we get home.Ingredients:
-1 1/2 pounds of ground beef
-1/2 yellow onion (diced)
-2 to 3 tsp. chopped basil*
-2 cloves crushed garlic*
-2 cans of diced tomatoes (plain)
-1 can of diced tomatoes (Hunt's Green Pepper, Celery & Onion)
-1 can of diced tomatoes (in sauce)
-3 to 4 cups of frozen veggies (I used a mixture of Lima beans, carrots, corn, green beans, and tri-colored pepper strips)
-salt to taste
-1 cup water (if necessary)
*I used Dorot Frozen Garlic & Herb Cubes. They are so easy. Just pop them out and cook with them! I highly recommend these for all of your recipes!
Saute diced onion in oil of choice (I use extra virgin olive oil) until translucent. Add in garlic and ground beef and cook until beef if browned. Drain beef.
Add beef mixture and remaining ingredients to slow cooker. Add water if you feel like there isn't enough liquid. Stir everything together and cover.
Cook on low for 6-8 hours.
Personally, we added a little bit of shredded cheese to ours and served fresh baked rolls alongside it. Super yummy and nutritious.
